Winemaking:
Manually harvested from biodynamically cultivated vineyards at optimal ripeness. After a short skin contact phase, the grapes are gently pressed under inert conditions to preserve aromatic integrity.
Cold settling at 12–14 °C for 24 to 48 hours.
Fermentation:
Spontaneous fermentation with native yeasts in temperature-controlled stainless steel tanks at 10–12 °C to enhance varietal purity and terroir expression.
Ageing:
4 months on fine lees with occasional bâtonnage, enhancing structure and mouthfeel while maintaining precision and freshness.
Organoleptic evaluation and food pairing:
Expressive and elegant with aromas of white peach, orange blossom, and fresh herbs. The palate is vibrant yet smooth, with fine acidity and a long, slightly spicy finish.
