Vinification and fermentation:
Vinification by soft pressing, fermentation in barrique
at 16°- 18°C. Aged in barrique on fine lees with periodic
bâtonnage.
Recommended pairing:
Ideal with shellfish and all flavorful fish dishes.
Serving temperature 12°C.
