Winemaking:
Grapes are harvested in the early morning hours to preserve freshness, then immediately chilled through our advanced cooling tunnel, allowing for cold maceration on the skins. Following destemming, a gentle pressing is carried out in a protected inert atmosphere.
Cold static clarification at 12–14 °C for 24 to 36 hours.
Fermentation:
Temperature-controlled fermentation in inerted stainless steel tanks at 10–12 °C to preserve varietal aromatics.
Ageing:
Rested on fine lees for 3 months in stainless steel tanks to enhance texture and complexity.
Food pairing:
Crisp and expressive with aromas of green apple, citrus zest, and meadow herbs. A refreshing palate with vibrant acidity and a clean, mineral finish.
Ideal as an aperitif or paired with light salads, grilled fish, cold starters, and fresh cheeses. Especially enjoyable on warm spring or summer days.
