Short cryo-maceration of the skin through soft press. Thermocontrolled fermentation at 15°C, interrupted at 12,5% vol. Aged in
stainless steel with periodic suspension of lees through injection of
carbon dioxide.

Ideal with starters, light dishes and cheese.
