Description:
Sir Passo was born from the desire to experiment with new flavors, new aromas, and new scents that can surprise and amaze from the first taste. It is a wine with an intense red color characterized by unique aromas, very strong and decisive, which are close to those of ripe red fruits such as cherry and black cherry. The taste is velvety and does not attack the palate, leaving a pleasant softness that makes it suitable to accompany tasty first courses and second courses based on red meat and game.

Harvest:
The winemakers separate the berries from the stems and lightly crush them. The Poggio Lauro Sir Passo Toscana Rosso first ferments for eight to ten days in stainless steel on the mash. Post-fermentation maceration on the skins lasts two to three days. During the second phase, dried, lightly crushed berries are added to the wine, followed by a second fermentation lasting about three to five days and malolactic fermentation. The result is a fruity wine with delicate residual sweetness.

Vinification:
In the Tuscan dialect, "sirpasso" means "very dry," but this wine's taste tells a different story. The term "sirpasso" refers to the unique process in which the grapes are slightly dried before fermentation, a process lasting ten to fifteen days. The wine consists of 80% Sangiovese and 20% Merlot, sourced from the Maremma region along Tuscany's west coast.
